French Hot Chocolate Recipe

Demitasse Cups with Chocolate Residue


7 oz. dark chocolate (I use 11 squares of Trader Joe’s Pound Plus, 72% cocoa solids, but two bars of 3 ½ oz. will do)

2 c. milk

1 c. water

2 T. unsweetened cocoa powder

1 tsp. red chile powder (medium hot)

dash of salt

cacao nibs (I roast cacao beans then peel them. Break the bean into nibs and add as many as you like.  These are bitter and are something of an acquired taste.)


Heat to close to boiling, stirring occasionally.  Remove from heat and blend, either with a whisk or handheld blender.  Serve in a demitasse.  Serving size depends on your level of chocolate addiction.  I have a half cup.  A quarter cup may be plenty.  Store in an airtight container in the refrigerator.  Shake before serving.  Reheat individual serving in the microwave. Makes approximately 8 half cup servings.
